    Peanut Butter Banana Popsicles | Dietitian Debbie Dishes

    Cool off this summer with a batch of these easy peanut butter banana popsicles. Make them extra special by dipping them in chocolate and adding some chopped peanuts.

    Nothing is more iconic of summer than 4th of July fireworks and popsicles. Are you headed to any 4th of July picnics this weekend? Are you looking for an easy recipe for something to bring with you? Well, look no farther!

    Everyone loves popsicles – especially homemade ones that include a few of my favorite things – ie. peanut butter and chocolate! In addition to being ridiculously easy to make, these peanut butter banana popsicles are super delicious, vegan, and require <10 simple ingredients. 

    Why You’ll Love this Recipe

    • A Healthier Summer Treat: these simple, 4 ingredient popsicles are the perfect healthy treat for summer that are just naturally sweetened with a little maple syrup.
    • Diet and Allergen Friendly: these popsicles are vegan, dairy free, and gluten free. For those allergic to peanuts or nuts, you can use sunflower butter instead.

    Ingredients You’ll Need

    • Bananas: you can use either fresh or frozen banana for these popsicles. The more ripe your bananas, the sweeter these popsicles will taste so we like to use ones that have some brown spots (ie. banana bread bananas).
    • Peanut Butter: use you favorite creamy peanut butter for this recipe. You can use chunky peanut butter too if you would like. If you are using a natural peanut butter just make sure to stir it well before making this recipe. Don’t want to use peanut butter? You can also make these with cashew butter or almond butter. 
    • Milk: we always have plain, unsweetened soy milk in the fridge so that’s what I use for these. Soy milk also means these will have some protein as well. However, any plant-based milk like almond milk or oat milk can be used. If you want an extra creamy treat, you can use canned coconut milk.
    • Maple Syrup: add some natural sweetness with a bit of maple syrup. You can skip it if you want these to be less sweet.
    • Chocolate Chips: totally optional, but we love adding a drizzle of melted chocolate to these popsicles after freezing! We just melt some chocolate chips in the microwave and drizzle over top of each popsicle. You can also dip the popsicles into the melted chocolate. I typically use semi- sweet chocolate chips (I like the vegan Enjoy Life chocolate chips), but dark chocolate chips are also delicious! 
    • Peanuts: add a bit of crunch to these healthy popsicles with some chopped, unsalted roasted peanuts! Make sure to add them right after you drizzle with the chocolate so that they stick. (If you let the chocolate harden first, the peanuts will just fall off!)
    • Optional Ingredients: make a chocolate version by adding 2-3 tablespoons cocoa powder to the popsicle mixture before blending. You can also add 1 teaspoon vanilla extract to this popsicle recipe.

    How to Make Banana Popsicles

    Step One: Add the bananas, soy milk, peanut butter, and maple syrup to a high-speed blender and puree until smooth. (You can also puree in a food processor.)

    Step Two: Transfer the pureed banana mixture to popsicle molds, insert wooden popsicle sticks, and freeze overnight. Melt chocolate chips in the microwave and drizzle over each frozen popsicle the sprinkle with chopped peanuts. Arrange on a baking sheet lined with parchment paper and transfer to the freezer to allow chocolate to harden and then serve!

    Expert Tips

    • Use extra ripe bananas: these peanut butter popsicles will be sweeter if you use extra ripe bananas.
    • Make it toddler friendly: I left a few of these popsicles plain (no added chocolate/peanuts) and my toddler loved them! A great summer-time afternoon snack for little ones.
    • Storage: After topping in chocolate, arrange on a sheet pan lined with parchment paper and transfer to the freezer to allow the chocolate to harden. Once chocolate is hardened, transfer to an airtight container and store in the freezer for up to 3-4 weeks. (If they last that long!)

    How do you get popsicles out of the mold?

    My favorite way to get popsicles out of the mold is to run them under hot water in the sink for 30 seconds to a minute until they can easily be pulled out of the mold.

    These homemade banana popsicles have 23 grams of carbohydrates per popsicle.

    Cool off this summer with a batch of these easy peanut butter banana popsicles. Make them extra special by dipping them in chocolate and adding some chopped peanuts.

    Instructions

    • Add the almond milk, bananas, and peanut butter to a blender and puree until smooth. Pour mixture into popsicle mold and freeze.

    • Once popsicles are frozen solid, melt the chocolate chips in a small bowl in the microwave, stirring every 30 seconds.

    • Working quickly, remove one popsicle and spoon or drizzle with melted chocolate over the top 2 inches of the popsicle. Sprinkle with chopped peanuts and set on a baking sheet lined with parchment paper.

    • Use the same technique on all of the popsicles and then place back in the freezer until the chocolate hardens. Serve!

    Notes
